Oats have been a big part of my diet for the last couple of years! Porridge every morning after Yoga loaded with fruit and berries, but honestly I think I overdosed because I can barely look at a bowl of porridge these days. I had a bowl the other day with honestly the sweetest soy milk that I can't even thinking about as it turns my stomach.... yuck! So to substitute I have been making homemade granola, this is not a new thing for me to eat as growing up my mum used to make the besttt granola but with too many dried fruits that I could handle (I prefer the fresh fruit). So my Homemade Cacao & Nut Granola is my take on my mums delicious invention!
What you will need:
Large mixing bowl
Large baking tray
Table spoon
Weighing scales (or weighing jug if you don't have a scales)
Ingredients:
250g Oats (gluten free oats to make the recipe GF)
2 Tbsp Cacao Powder
2 Tbsp Chia Seeds
3 Tbsp Cacao Nibs
5 Tbsp Coconut Oil (add more if you want delicious granola clumps)
2 Tbsp Maple Syrup or honey or agave (add more if you like things a little sweeter)
50g Pecan nuts
50g Sunflower seeds
50g Pumpkin seeds
50g Almond flakes
50g Cashew nuts
50g Hazelnuts
Method:
Preheat the oven to about 180°.
Mix all the dry ingredients together in the large mixing bowl (nuts, oats, seeds, cacao powder & nibs) .
Heat the maple syrup and Coconut oil together and when combined add to the dry mix.
Mix all ingredients together and spread it out evenly on the large baking tray.
Leave in the oven for about 15 mins and then take out and turn the mix and put in until golden!
Take out of the oven and let it cool before you put it away in sealed containers!
I eat this granola with some soy or coconut yogurt, Kaki fruit, blueberries, tiny sprinkle of maple syrup, pomegranate seeds (if I'm bothered deseeding it) and some banana! Enjoy and if you have any feedback please comment below! x Niamh x
